DC Bakers – Enter the Coconut Cake Challenge

Hey DC bakers – do you have an awesome coconut cake recipe in your collection? If you don’t, do you want to create one? Then enter Eatonville and The Church Lady Cake Diaries’ Make Me Wanna Shout! Coconut Cake Challenge.

Yes, you heard me – DC bakers will be putting their coconut cake recipes head to head – battling it out for the glory of the ultimate coconut cake recipe and a $500 prize. The contest is a benefit for Miriam’s Kitchen. The deadline for entries has just been extended to March 1, so you have plenty of time to perfect your cake. Sign up on the Church Lady Cake Diaries.

I met Michon from the Church Lady Cake Diaries at the DC State Fair Bake Sale, and I think this project is absolutely delightful. If I hadn’t “gone baking pro” I totally would enter (it’s for amateur bakers only). But it also made me realize that I’ve never actually had coconut cake. I’m not a huge coconut person, although I’ve developed an appreciation for it in the past few years, but it’s rare I’ll choose coconut cake over, say, chocolate. Am I the only person who’s gone through life sans coconut cake?

Who says you have to choose coconut over chocolate cake? I have a recipe I’ve been meaning to revamp, but I don’t know if it will happen in the next week…

I have always loved coconut cake, but the idea of combining my all time favorite chocolate cake with coconut sounds heavenly as a combo:)
